Gas Interlocking Systems
Technical Specifications brought in in September 2001, the British standard BS6173, was amended to provide users of gas fired catering equipment with protection against the effects of exposure to combustion products (gases such as carbon monoxide) which are created as a by product of the cooking process, when using any type of gas.
BS6173 (June 2009) addresses these issues by requiring an interlock system to be installed into the gas supply system. An interlocking system enables the isolation of the gas supply, in the event of an emergency or extraction failure. A pressure switch is fitted to your extraction system and is connected to a gas solenoid valve; the pressure switch must detect your extraction system in full working order, the interlock system will energise the gas solenoid and allow you to use your catering equipment. A stop button on the control panel is pressed in an emergency situation and the gas solenoid shuts off immediately.
In a larger kitchen more than one stop button
can be fitted at emergency exits.
How this affects your kitchen at your premises.
A new kitchen installation must have an interlocking system fitted. In existing kitchens a system must be fitted at the any of the following:
- Major alterations are fitted or completed.
- A new canopy is fitted.
- More than half the cooking equipment is replaced.
- Any new alterations to gas pipe work.

It states in the Gas Safety (Installation and Use) Regulations 1998 (part F section 35) that, it shall be the duty of every employee or self employed person to ensure that any gas appliance installation pipework, or flue installation, at any place of work under its control is maintained in a safe condition as to prevent risk of injury to any person.
